Most spice on a shelf tells you almost nothing true. The front of the jar is advertising; the truth, if there is any, hides in the smallest type on the back. Here is what actually matters.
Origin, specifically. 'Product of India' is a country, not an answer. Cardamom from Idukki behaves differently to cardamom from anywhere else. A brand that knows its farm will tell you the region, because it is proud of it.
A harvest date, not just an expiry. Ground spice does not spoil so much as fade. A jar milled fourteen months ago is technically safe and practically flavourless. The packed-on date tells you how far into that fade you are starting.
A single ingredient. 'Turmeric powder' should read 'turmeric'. Anti-caking agents, colour and rice flour are how cheap spice hides being cheap. If the list is longer than one line, ask why.
